Ya los tengo envueltos para mañana, espero que gusten. Son de la repostería navideña de Javier Vílchez.
Ingredientes
800 gr de harina de repostería
400 gr de manteca de cerdo ibérico
400 gr de azúcar glass
125 gr de almendra molida
125 gr de almendra picada
1 poco de aceite de oliva
Azúcar glass para cubrir
Elaboración
Ponemos la harina en una bandeja de horno…
Gratinador, sin ventilador, a 250º, hasta que se dora por arriba…
Removemos bien…y volvemos a dorar, así unas 5 veces.
Tamizamos la harina y la ponemos en el recipiente que vamos a utilizar
En una sartén con unas gotas de aceite de oliva tostamos la almendra picada
Así….
Agregamos a la harina la almendra molida, la tostada, la manteca (la dejamos a temperatura ambiente un rato para que este a punto pomada)
